Giardiniera with Pearl Onions

Ingredients

  • 10 ounces cipolline or pearl onions
  • 1 small head cauliflower
  • 3 medium carrots
  • 3 celery stalks or 1 small head fennel
  • 4 cloves garlic
  • 1 1/2 cups wine vinegar
  • 1 1/2 cups distilled vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons sugar
  • 1 1/2 tablespoons salt
  • 2 bay leaves
  • 2 small fresh or dried hot peppers
  • 1 teaspoon black or mixed peppercorns

Instructions

  1. 1. Cut the cauliflower florets and stems in small pieces (about 4 cups). Cut pepper in square pieces about the same size. Angle cut the carrots in thin slices. Cut the fennel in thin wedges. Halve the garlic cloves.
